Spices

A spice is a seed, fruit, root, bark, or other plant substance primarily used for flavoring, coloring or preserving food. Spices are distinguished from herbs, which are the leaves, flowers, or stems of plants used for flavoring or as a garnish.

Bayleaf

Bay leaves are strong and contain a sharp, bitter taste. Their flavor and aroma are somewhat similar to the cinnamon bark but slightly milder. Clean or dried bay leaves are utilized in cooking for their distinctive taste and fragrance. The flavour is strengthened with the length of cooking time.

Black Cardamom

Black Cardamom is dried over a smoke fire and therefore contains a distinct smokey fragrance. The seeds contain sweetish, smokey taste when bitten into. It is sometimes considered inferior to the delicate green pods, but it has its uses in savory recipes or when a stronger flavor is required. It holds up well to competing flavors in chai mixes, and is delicious in strong coffee.

Black Jeera

Black Jeeraare sprinkled on to naan bread before baking. It is also added to vegetable and dal dishes as well as in chutneys. Jeera is an ingredient of some garam masalas and is one of the five spices in the Bengali spice mixture panchphoran. The seeds have little bouquet, though when rubbed they give off an aroma reminiscent of oregano. The flavour is lightly bitter and peppery with a crunchy texture.
